There are two possible routes, and using the wrong one is why people cancel Ring Protect and still get charged. Check which applies to you first.

This is the step people skip. Ring Protect can be billed either by Apple (if you subscribed inside an iPhone or iPad app) or by Ring Protect directly (if you signed up on their website). Only the biller can cancel it.
To check: open Settings → your name → Subscriptions on your iPhone. If Ring Protect appears there, Apple bills you — use route A. If it does not, use route B.
Go straight to the Ring Protect cancellation page →
Worth knowing: Each Ring location has its own plan, so cancel each one. If you pay through Amazon, cancel it in Amazon's Memberships & Subscriptions instead. Ring no longer refunds the rest of a billing period after you cancel.
Your cameras keep working for live view and alerts, but recording, video history and sharing stop. Download any videos you want to keep first.
Always confirm it worked. Look for a cancellation email, and re-open the billing page to check the status reads cancelled or "ends on [date]". Then set a calendar reminder for the day after the period ends and check your card statement. A surprising number of cancellations do not take on the first attempt.
Most services have a cheaper tier that people never look at, and several offer a pause instead of a cancellation. If you use Ring Protect occasionally rather than never, a lower plan or a temporary pause usually beats cancelling and resubscribing at a higher price later.
Recurra reminds you before Ring Protect renews, so you decide in time instead of finding out on your statement. It keeps every other subscription in one place too. No bank login, no account.
