There are two possible routes, and using the wrong one is why people cancel YouTube Premium and still get charged. Check which applies to you first.
This is the step people skip. YouTube Premium can be billed either by Apple (if you subscribed inside an iPhone or iPad app) or by YouTube Premium directly (if you signed up on their website). Only the biller can cancel it.
To check: open Settings → your name → Subscriptions on your iPhone. If YouTube Premium appears there, Apple bills you — use route A. If it does not, use route B.

Worth knowing: YouTube offers a pause of up to six months before it offers cancellation — useful if you only want a break. If you signed up through the iOS app the price was higher, and it must be cancelled in iPhone Settings instead.
Ads return at the end of the billing period and downloaded videos stop playing. YouTube Music Premium ends at the same time, since it is bundled.
Always confirm it worked. Look for a cancellation email, and re-open the billing page to check the status reads cancelled or "ends on [date]". Then set a calendar reminder for the day after the period ends and check your card statement. A surprising number of cancellations do not take on the first attempt.
Most services have a cheaper tier that people never look at, and several offer a pause instead of a cancellation. If you use YouTube Premium occasionally rather than never, a lower plan or a temporary pause usually beats cancelling and resubscribing at a higher price later.
